Durian Cheesecake

Tada! It's durian time again! 

I stored up a lot of durian meat in my freezer since the latest durian season. My mom bought a lot of durian back home...about 30 pieces? Hehe just when we gather all the durian together, it formed a small durian hill. :P And the worst is coming.... opening durian...take out the meat....bla bla bla... 30pieces of durian!! Not that easy ._. yea, your hand will be tired, especially fingers.

But, what can we do? Me and my family love durian so much and wish that we can eat durian ALL the time. My dad so cute, sometime he will take out some and put in a small bowl and enjoy it as his tea break. hehe. (Actually the main purpose for me to store the durian is to transform them into dessert.)

Since it's been a long time I didn't do anything about durian, why not I try it on cheese cake? Cheese, which is already very rich; and durian very rich too..... wow imagine when they combine together, SUPER RICH!! 

Recipe By a book named "Delicious Cakes"
INGREDIENTS: (I did half of the recipe)
For base
250g digestive biscuits (crushed)
110g butter (melted)

500g cream cheese (room temperature)
100g caster sugar
40g corn flour
200ml coconut milk
100ml UHT whipping cream
3 eggs (beaten)
350g durian flesh (pureed) - I smash it

Topping: (mixed together)
60g milk
40g UHT cream
1 egg yolk
1 whole egg
150g durian flesh (pureed) - I smash it too
1 tbsp caster sugar

Utensil needed
9" round loose-base cake tin

1. BASE: Melt butter in a saucepan. Add in biscuit. Press onto a 9" loose-base cake tin, refrigerate until set.
2. FILLING: Preheat oven at 140 c. Beat cheese and sugar until creamy. Add in cornflour and beat until smooth. Add in coconut milk and cream. Add in eggs. Lastly, add in durian puree.
3. Pour no.(2) onto no.(1), place cake in water bath. Bake for 1 hour. Remove from oven and spread on topping. Return to oven and bake for another 15 minutes. Turn on grill function (I has switched to upper heat) and grill for 5 minutes to get a burnt effect.
4. Cool cake completely before putting into refrigerator to chill for at least 6 hours before serving. Enjoy! ^_^
